Cultivating

Cultivation of olive oil involves the careful management of olive trees to ensure optimal growth, fruit production, and oil quality. The use of appropriate agricultural techniques, modern technologies, balanced fertilizers, and efficient environmentally friendly irrigation play a crucial role in determining the condition and productivity of olive trees. These factors significantly impact the quality and quantity of olives harvested, ultimately affecting the superior quality of the olive oil produced.

Harvesting

The timing of the harvest significantly influences the flavor, aroma, and overall quality of the finest olive oil. The optimal time for olive harvesting varies depending on the desired oil characteristics and olive variety. We mostly prefer manual harvesting for high-quality oil production, as it minimizes damage to the fruit. Handpicking allows for selective harvesting of ripe fruits while leaving unripe ones to mature further.

Production

Processing the olives on the day of their harvest play a crucial role in preserving the freshness of our premium quality olive oil. First the fresh picked olives are stored in a cooling room to prevent the heat in the olives to preserve the quality of the olives and after this the production starts. The olives are crushed firstly, and then the olive dough is kneaded in mixing tanks. After some time in the mixing tanks, now mellowed dough is run through a decanter. In the decanter, solids and liquids (Water and Oil) are separated. Finally, liquids are separated in a separator, resulting in a golden green oil. During these phases, our machinery is cooled with running water to keep the temperature of the produce under 27° centigrade and this way we achieve true Cold-Press in all our products.

Storage & Bottling

After storing the olive oil in chrome tanks for some time to ensure settling of solids, the oil is filtered to get rid of the remaining solid particles. All our products are stored in chrome tanks with Nitrogen gas to prevent any contact with oxygen. The storage facility is climate controlled to ensure the highest quality conditions for our products. Filling is done by hand free in a rotary machine and we strongly avoid filling our products to store them bottled making sure that our cold-pressed olive oil stays as fresh as the first day of pressing by storing them in chrome tanks as long as possible.
